We use a local distillery out of Cadillac MI called Iron Fish Distillery for our wet bourbon barrels. We then age our maple syrup in these barrels for 8-10 weeks. We roll the barrels daily to ensure the flavors are mixed with syrup. We then empty the barrels and heat the syrup back up with removes any alcohol from the syrup, then filter it again before bottling.
